Pastaaaaaaa

Here’s a step by step easy breezy guide to some pasta!

This pasta shape is technically called Pipette Rigate. I never knew that. I used to refer to it as the one shaped like macaroni. But I guess even macaroni comes in different shapes XD

I took water enough to cover the pasta. I added some salt and boiled it. Added the pasta when it came to boil. It takes around ten minutes on a medium flame for the pasta to cook. And if you don’t stir once in a while, some of it might stick to the bottom of the pan.

Meanwhile, chop some vegetables!

Owing to habit since I generally eat Indian food, I sauteed the chopped onions first! I don’t know if we’re supposed to add onions btw.

There’s no rocket science in cooking the veggies only that you don’t want to soften them too much. I did that once and it didn’t taste that good.

This time, I sauteed them for two minutes and covered the pan for five minutes, checking on them once in a while.
Now how do you know if the pasta is cooked?

It shouldn’t be too firm or too soft. That’s called cooking it ‘al dente’

If you're Indian your mom might scold you for biting into the pieces to check. XD But you can't help it :p
I take a piece out, cut it in half. See that line? That should be a very very very fine line. What I have in my hand here isn’t fine. So I let it cook some more. Basically, you should be able to chew it properly. So bite into a piece to check.

When it’s done which is when you can chew it easily without it being too soft, drain the water and keep it aside. Run cold water over it for 5 seconds. It won’t stick.

You will need butter, chopped garlic, a cup of milk, one tablespoon of all purpose flour (maida). The oregano and chilli flakes that I have collected after so many pizza deliveries came in handy. And I ground some black pepper to add to that seasoning.

About two tablespoons butter, a cup of full cream milk, one tablespoon all purpose flour, salt and seasoning.

Seasoning I used: Oregano, chilli flakes, ground black pepper.

Heat butter in a pan and add chopped garlic. You’ll need to add a tablespoon of all purpose flour immediately since the garlic starts turning brown. Cook on a low flame. Add milk slowly to it. Real slow. And keep whisking. You’ll need to keep whisking to avoid lumps. Bring the sauce to a thick consistency.

Add the seasoning along with salt and cook for a minute. You may also add black olives.

Add the vegetables and the pasta, mix well and there you go! Let it cook for a minute. Add milk if you think the sauce it too thick until you get the desired texture. Grate some cheese when you serve and enjoy!

The quantity I cooked seemed enough for two. And yes, tell me if I can make this even better. I think we have our own style that’s unique for each of us. I’ll love to hear from you how you do something differently. I might even try that and see how it goes for me.
